[DessertFilter] I'm looking for some tried-and-true apple cake recipes. What are your favorites?

I have 12 or 15 Gala apples that really should be baked into something, and soon. I'm looking for something seasonal--I also have plenty of pumpkin puree at my disposal, if anyone knows of a recipe that combines the two. I have in mind that I'd like to make a cake, but would certainly entertain other delicious options.

I have shelves of cookbooks, which is part of the problem--I don't know which to trust with all my precious apples! Hence my query to the hive mind: What are your favorite apple-related dessert recipes?

my all time favorite (so much so that when my mom makes one to take to work, she is REQUIRED to make 2, one for her work and one for me and brother to split) is German Apple Cake.
this is a very close recipe.

My favorite apple cake is from the New Basics cookbook, and I think that it's online as Spiced Up Apple Cake. It only uses three apples, but you can also make your own applesauce pretty quickly (it calls for that as well), with some of the others.

I had these for the first time the other day. The recipe sounds quite bizarre but they turned out quite nicely!

Its not exactly gourmet though.

Norwegian Apple Pie is really a cake. It is simple and incredibly delicious.

I made the Apple Spice Cake recipe from Joy of Cooking yesterday and it came out pretty well.

I also have a shorcut for a kind of apple crumble: arrange sliced apples in a baking dish (you can fill the dish; the apples will reduce), squirt a little lemon juice on them, sprinkle with your personal blend of sugar/cinnamon/nutmeg/etc, and cover with one box-side recipe's worth of Bisquik biscuit dough. Whatever you use to smooth out the dough over the apples (hands, spatula), get it wet first - the dough is sticky.
Bake according to the Bisquik biscuit recipe.

It's LITERALLY as easy as pie. But no crust.

Sprout, I do something very close to your shortcut crumble. I core and slice about 3 apples into wedges, put them into a buttered baking dish (corning ware, with a lid), squirt with lemon juice, toss in a bunch of nuts (walnuts, hazelnuts, pecans, almonds, whatever my freezer has), drizzle some honey on, sprinkle with cinnamon, a few grinds of nutmeg, put more pats of butter on top and bake at 350F until the apples are soft. I put the lid on, I think.

I'm thinking a pumpkin custard or even traditional pumpkin pie with a layer of thin apple slices on top might be tasty, but I've never done it.

I made this maple cake over this past weekend, and added two peeled and sliced up apples. It was delicious.

I'm a huge fan of a good Gâteau aux Pommes - super easy to make, and the best applecake around.
