Green-colored foods?

What are some green-colored foods I can bring to a potluck? Difficulty: gluten-free.

I'm attending a potluck party that has a green-colored foods theme. The only dietary restriction is it must be gluten-free. Looking for some ideas: mains, sides, dessert, all are welcome.

This Kale and Brussels salad I keep recommending on askme. It's amazing, feels like a fancy restaurant salad (i never bring home leftovers), doesn't wilt because kale. Definitely green.

Main:
Stuffed peppers.

Sides:
Asparagus.
Broccoli salad, although that seems more like a summer dish.
Fried green tomatoes.
Winter salad, featuring kale and brussels sprouts.
Zucchini.

Dessert:
Key lime pie.
Pistachio pudding.

Mushy peas (stewed marrowfat peas) are very green, gluten free, and are lovely. Alternatively, if you've not been brought up eating them, they could be the most alarmingly foul thing you've ever seen on a plate.

I like to make a quiche with blended/pureed spinach mixed into the egg base. It turns out a vibrant green normally. It could be a play on “green eggs and ham” and adapted to gluten free by using gluten-free pie crust or making it a crustless quiche (frittata).

Gonna be a lot of roughage in this meal. If you want to bring meat, here are some thoughts:

steak with chimichurri
herbed or pesto turkey or chicken roulade
rosemary lamb shank
green curried duck or chicken

falafel would also be nice

Guacamole -- on its own or with sticks of veggies (green and yellow and red and orange peppers, celery, etc.)

Any of these gluten-free avocado dishes from the nice California avocado people. The California Cowboy Caviar seems like an easy and portable potluck dish.

Logan Moffit's TikTok-famous cucumber dish -- it's #24 in Slate's 25 Most Important Recipes of the Past 100 Years. You'd need cukes, (gluten-free) soy sauce, (gluten-free) fish sauce (like Taste of Thai or Thai Kitchen), scallions, MSG, toasted sesame seeds, and a tiny bit of sugar).

Colcannon isn't entirely green, but it's got cabbage and green onions along with the potato, and it seems like it would go with any other potluck items.

Kuku sabzi. Or a spinach frittata. The recipes I can find on the internet are not green enough, but my Roman friend makes them as green as grass. She uses a lot of spinach, always frozen.

Lettuce soup.

Watergate salad. Or an ice cream cake made with Baskin Robbins mint chip ice cream.

The green jello salad mentioned above is legit. We have our own family version with cream cheese and pecans. It separates into two layers as it chills and is very pretty in a glass bowl.

Super easy and delicious zucchini butter (no butter involved, vegan and gluten free). My go to for a potluck. And it’s a beautiful bright green!

Roasted Brussels sprouts are so good and so easy!! Make a thick salad dressing out of mayo, olive oil, vinegar, Dijon, maple syrup, onion and garlic powder, and either salt or grated Parmesan. It’s totally ok to omit the cheese; if you do use Parmesan, you probably don’t need salt. The exact amounts really don’t matter, you can’t go wrong with any of those very palatable and complimentary flavours!

Wash sprouts, dry well, cut them in half, toss them in dressing to coat, arrange cut side up on a tray and bake til brown. They’re scrumptious, like restaurant good!

Also, seconding the excellent suggestion of steak with chimichurri (essentially just parsley blended with oil, vinegar, garlic, pepper flakes and salt) which is extremely easy to make yet sounds and tastes fancy.
