virtualization.info and VMblog are the two most prolific newsy blogs. They have lots of links to get you going.

Disclaimer: I work for VMware and run the VMTN Blog. The VMTN Forums are a great resource if you're working with VMware software.

There's also Virtual PC Guy's Weblog, written by a program manager on the virtual machine team at Microsoft.
