What to do in Telluride before Memorial Day?

We are taking a short trip to Telluride at the end of next week with our hike-loving pooches. With the snow still there at elevation and mud at lower levels, where should we go hiking?

We could use some recommendations of trails that will be pleasant in the shoulder season in the area. We will be bringing snowshoes to strap to our packs just in case. Even better if there is an area that will allow us to let the dogs off-leash for a while.

We are staying in town, so we could use restaurant recommendations, too.
