The perfect (tangy) waffle

Please help me re-create this waffle. When I lived in Boston about 12-14 years ago, I often went to brunch at a place in Jamaica Plain. I forget the name (JP Cafe??), but they always had a ridiculously long line. Anyway—they had these sourdough yeast waffles (I think sourdough?) that just had this perfect ... tang. They were wonderful and I’ve never had anything like them since.

I tried to re-create recently using a NY Times recipe and there just was no tang! If you know what I’m talking about and have a good recipe, please share! Would make my COVID Sunday mornings much brighter.

I literally came in to post the same recipe as jon_snow. They are not sourdough, but they are yeasted and you will not be disappointed, they are the perfect waffle. I have served them to literally dozens of people and have never not been asked for the recipe when I bring them out at a big brunch (oh, big brunches, I miss you).

If you want really tangy - I've subbed out buttermilk for some of the milk in the recipe above. This is almost sour-y but still kind of awesome. It's a weirder waffle. But start with the base recipe and modify after you've tried the basic yeasted overnight waffles.... if you're looking for ++tang.

I literally came in to post the same recipe as bradbane. The King Arthur Classic Sourdough Waffles are our weekend waffle of choice.

We make these overnight yeasted waffles from The Kitchn just about every weekend, subbing the milk with buttermilk for extra tang.

These are the best waffles I've made by a long shot. Perfectly tangy! The pancakes were great too.
