Savory baking suggestions?
May 3, 2020 5:19 AM   Subscribe

I'm looking for savory baking suggestions, but recipes cannot include dairy, nuts, or seeds. Eggs are okay. What can I put in my muffins and scones? All of the savory bake suggestions I can find suggest cheese or nuts, which I must avoid for allergy reasons. I also don't eat pork, so bacon scones are out. Any other savory baking suggestions welcome!

Pizza muffins. Like this or this. I haven't tried either of them, but they look similar to the one I use. You can omit cheese or use a non-dairy cheese or mix it up however you want. You can also use non-dairy milk and use oil instead of butter if that's an issue. They're very versatile.

Also, we make cornbread with shredded zucchini. It makes it more filling. We serve with chili or taco-style beans.

With pickle relish.

Onions sliced thin and cooked until soft and brown.

Small diced winter squash roasted in a hot oven.

All-beef hot dogs sliced thin.

Chicken or turkey sausage cooked in loose crumbles.

Pimentos. or Olives. Or both.

Corn maybe with a little chili powder.

Cooked mushrooms.

Mixed fresh herbs. Lots of 'em.

Marinated artichoke hearts, diced.

Lemon zest added to most any of the above.

Kimchee (all right; too far out.)

Marmite or nutritional yeast. Loads of herbs and spices, like garlic and basil. And you can always use plant-based milks and cheeses, just look for vegan scone/muffin recipes to use as your base—not all plant-based milks/cheeses are nut-based, some are soy, tapioca, etc.

Ohh and focaccia is delicious (ok, i love bread). I've made it with sundried tomatoes and rosemary, but you can basically use anything for it.

Oh yeah! Rosemary or thyme!

Or: make them plain, but out of super fresh flour and other excellent ingredients. They are wonderfully ready to show off your favorite accompaniments: a salad, some sliced cucumber, some amazing pickles, cold cuts, olive oil, butternut squash spread (I just invented that idea, but it totally could work), deviled ham if that's your thing, hummus, etc.

I often use turkey bacon or sausage where it calls for regular bacon. Works fine, but adds less fat, so sometimes you need to make it up.

sundried tomatoes
corn kernels
olives
caramelized onions
caramelized garlic cloves
little cubes of caramelized butternut squash
finely diced roasted red bell pepper (easiest is to dice first then saute' in hot pan, close enough)

Here's an olive bread recipe I've been looking at, but not yet tried: Jim Lahey’s No-Knead Olive Bread

This crab and corn muffin recipe is something I've been meaning to try out; the muffin component here calls for butter and buttermilk, but I imagine this should work with any non-dairy corn muffin recipe.

I don't eat any dairy. You can substitute cider or orange juice for the milk. Corn muffins with lots of sauteed onions, lots of eggs, can of corn are my version of corn pudding. Sometimes I add chicken, too.

I miss pizza, a lot. My closest approximation is polenta with olives and pepperoni and plenty of olive oil; you could try beef sausage or other pizza toppings. Not a muffin, tho.

Scallions or chives in scones are amazing. I bet leeks would be, too, I just haven't tried that yet.

A local-to-me steakhouse makes an excellent mini-bread that has big chunks of olive and caramelized onion, which is also amazing (and I don't even love olives that much).

+100 to corn muffins with jalapenos. Or other chiles, depending on your local availability and heat level preferences. Or just more corn.
