I want to adapt a salted caramel cheesecake recipe that calls for pretzels, but I cannot find any gluten-free around me.

I want to adapt a salted caramel cheesecake recipe that calls for pretzels, but I cannot find any gluten-free around me. And the recipes I've found are all for soft pretzels. The recipe lists 200 grams of pretzels blitzed "until finely chopped".

I don't know much about pretzels; is there something else that could be substituted that would give the same kind of salty punch? O, and do I need special pretzel salt if I do end up finding a recipe?

Schär seems to be a common European brand that has gluten free pretzels . The website allows you to search by country and city and product you may be able to find a place that carries them near you.

Response by poster: Thanks, they don't have them in Paris. Unless someone has an address here, I really need an alternative or a recipe.

Best answer: Is it for the crust? Any salty snack should work. I’d probably do cookies (Biscoff etc would be great) or graham crackers and add salt until you get up to the general saltiness of a pretzel.

Best answer: Maybe omit it and use salted caramel. Sprinkle a bit of fleur de sel on each piece right before serving.

If you want a crunch, you can use blitzed nuts + salt.

That Schär store locator doesn't work for me, either, and they're pretty ubiquitous here in the UK, so I'm wondering if it's accurate for France. They're certainly on Schär's product list for France, and also Carrefour list them online (but Auchan don't).

(For some reason I had it in my head that Biscoff were gluten free. But any salty or salty sweet snack would work if it’s for the crust, probably mixed with butter.)

Best answer: Pretzels are pretty plain, honestly; they're a pretty standard white bread type dough with a complex cook to get a thick crispy crust. For your case, most of that doesn't matter since they're being crushed anyway. I would look up the crispiest, blandest gluten free cracker and make those; find one with the flours the closest to wheat. Crackers tend to be pretty quick and easy to bake.

Pretzel salt is plain salt just coarse crystals, so I'd add the coarsest salt you have. Nuts would also be a plausible substitute if you don't want to bake or don't have gluten free crackers available.
