Kefalonia: where to stay? Where to eat? Where to snorkel?

We (two adults, thirties) are off to Kefalonia for seven nights in early September. We want to eat everything delicious, swim in the sea every day, and see some handsome underwater wildlife. Please give us your recommendations!
We are thinking of staying in a couple or more different places over the course of the week, with a hired car. We want the tenor of the trip to be relaxation rather than trying to see every single thing on the island. We're looking for recommendations of good base-camp places to stay for a few days at a time, either towns/villages or specific apartments. We don't really enjoy all-inclusive package-type places - would rather forage for tavernas and self-cater our breakfasts and lunches. Thanks!
