Here's an Instant Pot recipe we love because, after a little sauteeing, it's very "throw everything in and you have a complete dinner." (Also it's delicious.) What I mean is you don't even have to make rice or any go-with because there's quinoa in there so it's a self-contained meal. Looking for more like that, for weeknights. Thanks!

This chicken and black bean chili is fantastic, and there isn’t even any sauteeing - just put everything in the pot and turn it on. I like using chipotles in adobo as the heat.

If you want a starch with it that doesn’t require cooking, you could do tortillas or chips - I tend to just eat it alone though. One caveat is that I find it takes 35 min on high pressure with unsoaked black beans - with that and the time it takes coming up to pressure, it’s about a hour total of cook time. It fills up my 6qt instant pot but doesn’t overflow.

Chicken and rice burrito bowl, you sprinkle the rice on top before the pressure cook so that it doesn’t stick to the bottom.

This one is awesome: creamy ziti. My kids ate all of it.

It's probably terrible for you, but it was really good.

Also of note: I believe you have to get the ingredients list from the linked recipe. But the instructions worked perfectly.

I like this Kunde (black eyed peas, spinach, tomatoes, and peanut butter).

This chili mac is when I really really don't want to cook.

These fiasco beans are really tasty. I always forget to soak my beans, so I usually just cook it for 30 or 35 minutes.
