Looking for an online only English Literature course in Short Story?

I'm looking to take an online only English Literature course in the Short Story. Are there any in Canada or other countries (US, UK) that would be accredited back to a Canadian University transcript?

Most, if not all, universities have online offerings through their English departments. Many online courses only run in the summer. You need to speak to whoever's in charge of accreditation at your own school in order to know whether a specific course would transfer. You might want to start by simply looking through the course catalogs of universities you're interested in and then take that information to your own school for confirmation of credit.

Your university should have guidelines for how to arrange transfer credit. Here, for example, is how such courses would be handled in the Arts & Sciences division at the University of Toronto.
