Is this what pancetta looks like or is it bad?

I bought some sliced pancetta at the grocery store today and just opened it. The middle of each slice is like, soft and mushy. It is like that the whole way through the packet. See inside for photos.
Pictures here (if the link works). It doesn't smell bad or have any odd colors. A few black specks but those seem to be peppercorns.
I have only ever cooked with pancetta in its lardon form, never sliced this thin, so I have no idea if this is just what it looks like or if I have a bad batch. Can I eat it? I am planning to cook it thoroughly.

Best answer: Yeah, I've only really used pancetta that's been cured flat but the way yours looks seems consistent with other rolled pancetta . The texture might be a bit disconcerting if you were eating it as is, but since you are planning to cook it, it should be fine.
