Saving Broccoli

Help! I would like to have broccoli or broccolini in my freezer, ready to be roasted when the need for roasted broccoli strikes.

The internet tells me that to freeze my fresh broccolini I must first blanch it- no problem. BUT! Have any of you fine folks done this THEN thawed and roasted the broccoli? Does it end up in mush? I’d just try it but I am so pregnant right now that I just don’t have the time or energy to waste food.

What about roasting it first and then freezing?

Best answer: The advice in this article is not to thaw before roasting.

Budget Bytes' Oven Roasted Broccoli starts with frozen broccoli from the grocery store.
