Turkey Cutlet Recipe from the '80s

I'm trying to find a recipe my mother used to make in the '80s. I think she found it on the back of a package of turkey cutlets.

I'm trying to find a recipe my mother used to make in the '80s. I think she found it on the back of a package of turkey cutlets.

As best as I can remember, the cutlets were topped with cheese, sliced red peppers, and some kind of tangy flavoring. It might have been called Mexican Turkey, but I'm not sure. I think it was Jennie-O brand, but I'm not sure about that either.

I've searched the Jennie-O and Honeysuckle White sites for both "Mexican Turkey," and the ingredients as I remember them, but I haven't seen anything that looks like what I'm trying to find.

Does anyone here know this recipe?

Maybe something like this from the National Turkey Federation? It has the cheese and some spices, though no red pepper. (In related news, there is a National Turkey Federation.)

I have a recipe from the awesome Best Recipes from the Back of Boxes, Bottles, Cans & Jars cookbook for "Mexican Turkey Bake" via Uncle Ben's rice. It has green chiles, corn with sweet peppers, bsour cream, and enchilada sauce but they suggest cubing the turkey. Could that be it?

Could it be this? Not really 'Mexican', but I know in the 80s my tastebuds sure as heck didn't know the difference.
