What trails in Jefferson Co, CO are comfortably rideable on cross bikes?

That's pretty much the question. We'll be in Jefferson County, Colorado, USA, towards the end of July. We don't have mountain bikes (this was going to be their debut weekend, but alas), but are active dirt/gravel/light trail/B road cyclists, on bikes with 40mm tires and drop bars (gravel grinders). What trails would/could you recommend?
I've just been looking at elevation profiles and photographs, and I think I'll be able to keep us safe and happy, but am more than eager to hear locals' recs. Buffalo Creek looked like it had some pretty doable sections.
