How to use only a custom dictionary in Word (or other word processor)?

In Windows, using Microsoft Word, I want to be able to create and use a limited word processing dictionary (just 50 words or 500 words or whatever) and use only that dictionary: check spelling on the fly, flag unknown words, add flagged words to my dictionary.

I do not want to use a standard dictionary in addition to my custom dictionary. Just my custom dictionary.

What's the procedure? Add it as a new language? Is that possible?

And if you can't do this in Microsoft Word (for Windows), is there a good free option that will work well on Windows 10?

I'd select a language dictionary that doesn't overlap much or at all with English and/or your word list and then use a custom dictionary.

There will be the chance your misspellings map onto a word in the other language but that risk may be offset by the ease of setting this up.

If you use a language with a different alphabet (like Russian or Greek) there will be no overlap.
