Find my buddy an anniversary in the sun

Help me find a romantic holiday destination for my friend's anniversary...

What he is looking for is something with a little bit of culture, a little bit of history, some decent nightlife (but not filled to the brim with English pissheads). Budget is £600 per person (inclusive of flights and hotel, no car) and will be flying out of the UK sometime around late February - the anniversary falls on the 21st. The destination must have good weather. I have suggested Greece amongst other ideas but the weather isn't exactly fantastic according to weather reports. Help me make a friend's special day even more special.

Istanbul? I've never been there, but it fits in with the culture, history and nightlife they're looking for. weatherunderground.com's forecasts look promising, too.
