What dish (dessert?) can I make with Vietnamese coconut chips?

I have a large bag of these Vietnamese coconut chips, which are sweet and delicious. While I could easily eat them a handful at a time until they were all gone, I'm wondering if there are any dishes where the crunchiness might add something. For example, I understand some people eat them with fruit and yoghurt; in Vietnam we also had them as part of a fruit drink layered with ice and coconut milk, which was amazing (would love that recipe!) Any ideas?

Well, they are a great addition to granola but I don't think you can beat just eating them plain! You could also use them in place of corn flakes in a cookie recipe (there are great oatmeal cookie recipes with corn flakes for crunch).

Granola, trail mix, ice cream / Asian and Western salad / oatmeal / ginger creme caramel / rice pudding garnish. Google "honey joy" recipe and sub the cornflakes with your chips. Crush coarsely and use to bread shrimp / chicken / fish, or pulverise and add a little melted butter to use as a base for a fruit tart / pie / cheesecake.

There's an on-again off-again trend in modernist/avant-garde cuisine to do dishes that are an ingredient interpreted through several different textures. So you could use these as a crunchy element in a dessert that's made entirely of coconut. Think crunchy, chewy, liquid, soft, etc.

Forgot to include recipe; you could sub them in or use both shredded coconut and your chips in this (really really good) olive oil brownie recipe.
