What is the best book on the history of sending mail, news, orders and other information by ship?

Hmm, tricky. What you really want is a cross between Uncommon Carriers (a part of which might help you) and Looking for a Ship. There's also some good stuff in the histories on New York City newspapers; they talk a lot about the boats and transatlantic news. There was basically an arms race for better and faster boats to get news off the ships coming in from Europe. A Magazine of Her Own touches on this too. More relevantly but specifically American, and I haven't read it, but The Way Of The Ship looks great.
