Young French chef seeks US employment

One of my former English students from Toulouse, France is now attending Anne-Sophie Pic's culinary school and hopes to find a job in the U.S. in a couple of years. He has asked me for advice on how to go about that, avenues he should pursue, the kind of Visa he should get (before or after he finds a job?), so now I'm asking for you--- any advice or personal knowledge for fulfilling this dream of his?

Where's the school? Getting a work visa in the US is difficult (there's a certain time to do them and the quota vanishes quickly). If the school was in the US he could get a one-year OPT visa, but otherwise it's up to the companies to decide whether they want to sponsor him.

As far as I know to get a H1-B working visa, you need to have a 4 year bachelors degree. and like divabat mentioned, quota vanishes within days.
