What can I make with Nanking cherries?

I anticipate a big crop of Nanking cherries this year, and am looking for ways to use them. Help, please?

Nanking cherries are tart and tangy, and I'm not sure if I can simply swap them in for recipes that call for sweeter varieties or not. They are also small, and a chore to pit (in fact, I gave up on that project last year, and just canned a bunch of syrup, which I mix with club soda).

Have you used them in jam making, pie making or something else? Would you kindly share your recipes and techniques? Thanks.

Cherry pâte de fruits? I think a tart cherry would work beautifully even without added sugar.
