Can I Eat It? Sprouted Beans Edition

The pinto beans have been "soaking" for about 36 hours at room temperature. I opened the pot and saw that the beans have expanded past the water level, and the ones on top (out of the water) have sprouted. I know some people eat sprouted beans on purpose. Is it OK that the soaked beans have been exposed to the warm/room temperature air for maybe 24 hours?

Also: do I just cook them as usual? Any sprout wisdom welcome.

Yes, you can cook and eat them or eat them raw in a salad. You can even sprout them more if you want. And sprouted beans are less gassy.

Sprouted beans cook faster than unsprouted ones. Something to keep in mind.

No problem. I do that all the time, just from forgetting about them, but if anything they're a bit better that way. Tastier, that is.

Mine don't actually sprout, though, because I salt the soak water pretty heavily (at least I assume that's why they don't). Salting the soak water gets the salt into the beans.
