Update my haircut

I have a boyish haircut, and I want to mature it up a bit. How should I style it, and what should I tell my haircutter?

It was my first attempt at really styling, and I can't seem to work in any sort of a part without product, as my hair has a tendency to fall straight down. It's pretty thick, and the hair feels dry to me.
What type of hairstyles would compliment my face, and what should I tell my haircutter?

I like the parted hair, too. I'd ask the barber to trim the back and the sides a lot shorter and do a little shaping on top to help facilitate the parting.

Here is what I would do: use the hair product to make a part, but get the back and sides trimmed and keep them neat.
The other thing, though - you look like you have thick, coarse hair not unlike mine. I find that it's really difficult to keep it parted and pushed to the side without using a ton of product and feeling kind of gross. I find that more length on top (up to a point) makes this easier, although I still end up pushing my hair out of my face all day. You may need to experiment with lengths and different kinds of pomade.

Really traditional is in for 2012- first, ask them to take it off your ears; tell them you'd like to part it to the side and let it hang a bit on your forehead. Shorten/square up the back of it- this is probably the worst feature at the moment. But hey, enjoy having a full head of hair.
Have them feather/layer the rest of it so that it'll look better when it 'falls straight down'. Use a blow-dryer for a week or two to sweep it to the one side and it'll likely start staying there.

You look a bit like a young Andy Partidge from XTC. So maybe do what he was doing back in the early 80s.

You have great hair! I agree it's time to lose the bangs. Do what women have been doing since the dawn of time: find celeb pics with hair similar to yours, bring to your haircutter and say, How do I get this? Also, seconding MangyCarface -- you can "train" your hair to sweep to the side by blowing it in that direction, and just use a tiny bit of product for insurance-hold.
