		<description>BBQFilter:  What&apos;s a good recipe for mustard-molasses South Carolina barbecue sauce? &lt;br /&gt;&lt;br /&gt; It is always dangerous to wade into the realm of American barbecue, with its regional partisans and civil wars, but lately I&apos;ve been having a craving for barbecue sauce based heavily on molasses or brown sugar and mustard; I&apos;d prefer molasses.  I believe this sauce is attributed to South Carolina, and I&apos;d like any recipe you trust.</description>

		<description>Here&apos;s one I&apos;ve always liked.&lt;br&gt;
&lt;br&gt;
&lt;strong&gt;Ingredients&lt;/strong&gt;&lt;br&gt;
3 Tb. canola oil&lt;br&gt;
1 small, yellow onion (minced)&lt;br&gt;
2 garlic cloves (minced)&lt;br&gt;
3/4 C. american-style mustard&lt;br&gt;
1/3 C. ketchup&lt;br&gt;
1/4 C.  dark brown sugar&lt;br&gt;
1 C. vinegar&lt;br&gt;
1/2 C. water&lt;br&gt;
2 t. lemon zest (finely chopped)&lt;br&gt;
salt, black pepper and cayenne pepper to taste&lt;br&gt;
&lt;br&gt;
&lt;strong&gt;Preparation&lt;/strong&gt;&lt;br&gt;
&lt;br&gt;
Heat the oil in a pan over medium heat. Saute the onion until soft (about 5 minutes). Add the garlic and cook a further 30 seconds. Add the remaining ingredients, and simmer over low heat for 30 minutes. &lt;br&gt;
&lt;br&gt;
Strain through a fine mesh strainer.</description>

		<description>This is the Cook&apos;s Illustrated version of the vinegar and mustard sauce. It&apos;s pretty good on pulled pork. Their instructions are just &quot;mix&quot;, but I&apos;ve cooked it before and it&apos;s fine - it mellows some of the flavors a little (it&apos;ll also make everything in your kitchen smell like vinegar, so doing it outside is best):&lt;br&gt;
&lt;br&gt;
1 c cider vinegar &lt;br&gt;
6 tbsp mustard (dijon or otherwise)&lt;br&gt;
2 tbsp maple syrup, honey, or molasses&lt;br&gt;
4 tsp Worcestershire &lt;br&gt;
1 tsp Tabasco&lt;br&gt;
1 c vegetable oil &lt;br&gt;
2 tsp salt &lt;br&gt;
black pepper to taste</description>

		<description>I&apos;m from SC originally and I don&apos;t use molasses in mine but here is my recipe:&lt;br&gt;
50 coarse cracked peppercorns&lt;br&gt;
1/2 cup honey mustard&lt;br&gt;
1 tbsp grapeseed oil&lt;br&gt;
1 tbsp balsamic&lt;br&gt;
1.25 tbsp whipped honey&lt;br&gt;
1 tsp green pepper hot sauce&lt;br&gt;
3 tsp chipotle hot sauce&lt;br&gt;
1 roasted jalepeno cut very small&lt;br&gt;
1/2 tsp - 2 tbsp of your favorite habenero hot sauce (to your tastes)&lt;br&gt;
a dash of liquid smoke (if cooking the meat indoors)&lt;br&gt;
&lt;br&gt;
mix well.</description>
