I cannot attest to how any of those recipes may be the one used by Chipoltle, but I have a recipe handed down to me from my Father-in-law that will knock your socks off, make you and your great grandchildren famous, and is alot of fun to make. I've never been to Chipotle so I don't know. But I can tell you that the most sought-after carnitas are Michoacan-style carnitas which one of my uncles makes regularly.
In its finest form, carnitas are a bit crispy on the outside, with a bacon taste, and then steaming and tender on the inside. The strands of pork should almost fall apart to the touch. Anyways, to achieve this, my uncle makes them in a large copper pot over an open fire. The pot has to be watched carefully to maintain temperature control (the oil has to simmer at a constant level) and stirred for evenness. The whole process takes hours.
