iPad multitrack recording

I have an iPad2, a Peavy PV10 mixing board, several reasonable microphones (sm57, e835), and many acoustic and electric instruments. I do not have a computer that is anything other than ancient. What is going to be the best way to rig this all up for the best multitrack sound recording?

I'm assuming running the mixer through something that connects with the iPad, and then recording with GarageBand. What interface box? I don't have a lot of money, but I could probably swing getting an Apogee Jam or (perhaps) an Alesis iO Dock (but it seems like much of the functionality of the iO dock (phantom power, XLR in, etc) is available in the mixer). The price of an iRig is right, but it seems nutty to try to go in through that headphone jack.

And, is there something that will be better for me than GarageBand? Thoughts? Tips? Tricks?

ps: buy a nice workstation and ProTools is not a viable solution at this time.

I can't comment on everything, but I can say that I have been using a Apogee Jam with AmpKit + on my iPad 2 for the last few weeks and I am quite pleased.
