C is for cookie AND cake

My sister is having a cookie table at her wedding, and wants to extend the cookie theme to the cake. We're considering an icebox cake, but something largely composed of whipped cream is not going to do well standing outside in summer for a two and a half hours. Looking for ways to increase the stability of an icebox cake, or alternatively, other cookie-adjacent cake ideas.

She doesn't care that much about the wedding cake, as evidenced by the fact that she doesn't have one planned yet. The presence of a cookie-type cake would be more or less a joking nod to the tradition-minded folks who would be shocked if there were no cake at all, but we still want it to taste and look good. It will be an outdoor evening reception in Utah at the end of July, so it's likely to be dry and hot but not super-sweltering. I've tried freezing an icebox cake and that extended the amount of time it could be left out somewhat, but I don't know if that will be enough to keep it fresh enough long enough.

Other ideas we've come up with include three big decorated sugar cookies on a tiered plate, a standard cake with a gingerbread bride and groom for cake toppers, etc.

Another possible option would be cupcake wedding cakes with some kind of cookie decorations.

You can stabilize whipped cream. But if it is hot, it might not work. You could make a Graham Cracker Icebox Cake, which is served in rectangular cake pan. It will not fall apart and it is fun cake.

This cookies and cream pound cake is absolutely delicious. Also sturdy, so able to support itself and/or decorations for long periods with no problem.

We have a giant cookie cake for almost every birthday 'round here. Just a huge, thick chocolate chip cookie (about the size of a large pizza), with icing decoration. They make them at the local grocery store bakeries and also the cookie store in the mall; it's probably also possible to make them oneself, but I wouldn't know how to make sure it cooked through without burning.

Oooohhh! Do tiers. Like this and then the fancy shmancy white wedding cake columns with a smaller diameter layer on top and then the gingerbread bride and groom on top. That would be adorable. There is also this cookie on etsy, but you have to order 50.

One idea might be a cheese wedding cake. Not a cheesecake. A tiered set of cheeses. It's getting more popular in the UK (UK link), they look awesome and as long as you have a decent cheese supplier aren't impossible to do yourself.

I got married on Saturday and we didn't have a cake at all - I don't think anybody really cared.

Our dessert was essentially exactly the same as that icebox cake, but it is made in a long log type form.

What about a giant black and white cookie cake? It's a more cake-like type of cookie anyway, and it's topped with icing, so could be a happy medium.

Why not use cookies to decorate the outside of a fairly standard cake? Say, basic cake baked in three (smallish) tiers, and frosted with delicious stable buttercream or whatever is usually used. Then instead of decorating it with swirls of frosting or sprays of flowers or whatever, just smoosh chocolate chip cookies (the height of the layer) into the frosting, tiled in there covering the side of the tier like fish scales. And a tier with oreos, and a tier with jam thumprints. (or whatever 3 kinds of cookies are her favorites). The gingerbread cake topper sounds fantastic - what a great idea!!

Bravo to your sister! Cookie tables are an excellent tradition, and it's nice to see it spread far and wide. (We were filling lady locks for our table just hours before the rehersal dinner!)

I was just flipping through this new book on Whoopie Pies (or gobs, depending on your region) and they've got a boodle of recipes, but important to you would be the recipe to make a cake sized one. Depending on how many other cookies (types) you were having, you could also have a variety of flavored (and colored) gobs as decorative accessories to a larger gob cake - mix and matching the cake flavors with the icings.

Response by poster: These are all great suggestions, and I presented a bunch of them to my sister. She decided to go with this cake pan, which I found through spinturtle's link. I was pushing for whoopie pies myself, but I guess this is the next best thing.
