How do I stream my music from iTunes to my iPhone?

How to stream from iTunes to iPhone (now that Simplify Media is shutting down)?
I was a big fan of Simplify - until they shut down. What are good alternatives? I know of SubSonic and ooTunes already, but I'd prefer something integrated better into iTunes and not very expensive.

Google's announced what they're doing with Simplify. They're building a system to stream your music collection to your Android phone. I'd say wait and see what Apple does with LaLa instead, they're probably moving in the same direction, ultimately.

I've been using the StreamToMe/ServeToMe combo. It is way better than Simplify. It will even transcode videos on the fly. I don't use it a lot, but when I do, it's like magic.

Mac or Windows?
If Mac, check out Remote Buddy. Also, Dot.Tunes is a possible solution (requires an extra client on your Mac besides iTunes but it integrates with your library).
A more rudimentary and techy way here, here, or here.
There are plenty of services that let you upload your library to their servers for a monthly fee and then play it back on your iPhone (mSpot, etc), but that's not ideal.
