Baking for the Vegan Hordes

I am looking for large quantity vegan baking recipes (cornbread, oatmeal cookies, brownies, coffeecake, etc.) designed for 50 servings or more.

Ideally I'd like to find basic recipes like biscuits, sheet cake, drop cookies, bar cookies, etc. that can then be varied and flavored ad lib.

The cookbook Vegan In Volume saw a lot of use at my college food co-op.

Most simple non-yeast baked goods recipes (vegan included) multiply pretty well. The real key is having the right equipment - extra large mixing bowls, enough muffin trays, etc.

I don't have this cookbook myself but check out the Moosewood Restaurant Cooks for Crowd. The recipes are vegetarian but there is an index for which ones are vegan.

I do have that cookbook and it doesn't have any vegan baking recipes, unfortunately. You might want to try Another Dinner is Possible, the recipes are for 2 to 6 but its written by members of the Anarchist Teapot who do mass catering* and it contains instructions/hints on how to scale up.

I also have access to recipes that fit should the bill, just not at home, so they are not at hand. However it looks like we live in the same town so feel free to mefimail me and I can get you photocopies.


*I used to cook for them and we were up to 300+ people at that time, last time I ran into them they were doing a 1000 people plus.
