What kinds of ecommerce solutions are available for a business selling services?
I am going to start an online business selling services. I'll probably only have a few services for sale (Service A, B, C) but as part of selling those Services, I will need to collect a lot of information from the Customer and then have that information sent to me in a form I can manage. Further, I'll want to keep the Customer's information on file so that I can follow up with emails (both in making sure the service is complete and potentially selling future services).
Most solutions I see (e.g. shopify, yahoo stores) are designed for selling lots of products and not necessarily designed for processing a lot of information and selling services.
I'm looking for suggestions to get me started finding an ecommerce solution built around services and managing customer information databases. Thanks!

Ubercart for Drupal looks like it can do what you want, check out the events section of their demo.

phpForms looks like it has the option for Payment Integration for some of their versions.

Response by poster: No reason it needs to be one comprehensive solution. Any kind of solution would be helpful at this point and get me started in the right direction.
