How to capture Polycom video stream

I have a Polycom VSX 7000 that we use for video conferencing. I'd like to capture video conference streams and publish to a web server (or youtube) for playback at a later time. (does not need to be in real time) What open source tools can I use to do this? Or can someone point me to a "how to" for this....
