Anyone need a paperweight?

Baking filter: I've tested several iterations of the recipe for Ricotta-Olive Bolsos from the Tassajara Bread Book and

I have served, now, 4 baskets-full of cheese-filled rocks.

If you have made these successfully, PLEASE share specific instructions. These can be good- I've had them... I just didn't make them.

(I'm not looking for general bread-baking tips.)
