Is there a site out there that has simple, easy to read diagrams on hot to cut different vegetables properly?

What you want is generally called knife skills. On a quick google of "how to cut vegetables", the first hit is a pdf from Cooks Illustrated showing the chiffonade, julienne, and dice cuts, among others. This, from the egullet forums, was the third hit for "knife skills."

The older Joy of Cooking editions have really good diagrams for many kitchen tasks, from prepping artichokes to skinning rabbits. You can pick them up very cheaply online or at garage sales. I don't know how the new ones are.

This might not be what you're looking for, since you asked for diagrams, but I've found the technique videos on Epicurious immensely helpful for this sort of thing. Check under "knife skills".

Interestingly, that is the point of the Wii game Cooking Mama. It shows you precisely what to do, and which hand movements to use.
